Chocolate Peanut Butter Balls

 


Ingredients:

  • 1 cup natural peanut butter (look for one with no added sugar or oil)
  • 1/4 cup powdered Stevia or your preferred sweetener (adjust to taste)
  • 1/2 cup rolled oats (use gluten-free if needed)
  • 1/4 cup unsweetened cocoa powder 
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips (optional, can be omitted for fewer points)
  • 1-2 tbsp unsweetened almond milk (or any milk of choice, if needed to adjust consistency)

Instructions:

1. Mix the Ingredients:

  • In a large bowl, combine the peanut buttersweetenerrolled oatscocoa powdervanilla extract, and salt. Stir until well mixed. The mixture should be thick and somewhat sticky.
  • If the mixture seems too dry, add 1-2 tablespoons of almond milk (or another milk) to help bind it together. You want a dough-like consistency.

2. Form the Balls:

  • Roll the mixture into 1-inch balls. If you want smaller or larger bites, adjust the size accordingly.
  • If you’re using dark chocolate chips, you can either fold them into the mixture before rolling or dip the balls in melted chocolate later.

3. Chill:

  • Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30-60 minutes to firm up. You can also freeze them for about 15-20 minutes if you’re in a hurry.

4. Serve:

  • Once chilled, they’re ready to enjoy! Keep them stored in an airtight container in the fridge or freezer.

WW Points:

  • Depending on your ingredient choices (such as sweeteners and the type of peanut butter), the points will vary.  Each ball is generally around 2-3 points for 1-2 balls, with the chocolate chips adding a point or two.
  • To reduce points, you can omit the chocolate chips or use a lighter peanut butter or nut butter alternative.

Storage:

  • Store your No-Bake Chocolate Peanut Butter Balls in an airtight container in the fridge for up to 1 week or in the freezer for up to 2 months.

Tips & Variations:

  • Add-ins: You can mix in extras like chia seeds, flax seeds, or shredded coconut for added texture and flavor.
  • Chocolate coating: If you want to dip them in chocolate, simply melt some dark or sugar-free chocolate chips and coat the balls for an extra indulgence (just account for the points).
